About the Chef

Born and raised in Santa Monica, CA, Casey Corn is a classically-trained chef and food anthropologist based in Brooklyn, NY. In the course of her mission to connect people through food, Casey realized that mac and cheese was a fascinating way to explore food, culture, and identity, which led to the creation of March Macness (and many delicious mac and cheeses!).

Ingredients½ yellow onion

7 whole cloves

4 cups whole milk

1 bay leaf

1 tablespoon kosher salt

½ teaspoon ground white pepper

1 pound pasta, the shape of your choice

½ cup unsalted butter

½ cup flour

3 cups/12 ounces extra-sharp cheddar cheese, grated

2 cups/8 ounces fontina, grated

Equipmentmedium pot

large pot for pasta

sauté pan (3 ½ qt)

strainer

whisk

spatula

slotted spoon

9 x 13 or 3 ½ qt baking dish (optional)
